                       ( Milk Rice Sweet )



                  Kiribath (milk rice) is a highly popular and essential dish for special occasions among Sri Lankans. It can be prepared in various ways, and one of the most beloved versions is Imbul Kiribath.  
Sri Lankans often prepare Imbul Kiribath for breakfast, and it is also recognized as a traditional Sinhala New Year dish. Imbul Kiribath is a well-known and easy-to-make Sri Lankan dish enjoyed by the Sinhalese community. It is prepared by mixing kiribath (milk rice) with a sweet coconut filling made from grated coconut and treacle. The dish gets its name because its shape closely resembles the seed pod of the 'imbul' tree. Enjoying it with ginger tea makes for a delightful experience.


Ingredients :

For Coconut Treacle Mixture:  
- Sugar  
- 2–3 cardamom pods  
- A small piece of cinnamon bark  
- 2 cups of grated coconut  
- A pinch of salt  

For Kiribath (Milk Rice):  
- 3 cups of rice (red or white Kekulu rice)  
- 6 cups of water  
- 2 cups of thick coconut milk  
- Salt to taste  

Directions :

prepare the coconut syrup mixture.  

To caramelize the sugar, place a pan on the stove and add some sugar, letting it melt and turn golden brown. 
- Then, add about a cup of water and another cup of sugar.
- When the sugar syrup starts bubbling, add a few crushed cardamom pods, a piece of cinnamon stick, and two cups of coconut milk. Add a pinch of salt to enhance the flavor. 
- Let it simmer for a few more minutes until the coconut milk is well infused. Then, remove it from the heat.

Let's make Kiribath (Milk Rice)

Wash and clean 3 cups of rice, then cook it with 6 cups of water. (Use 2 cups of water for every 1 cup of rice.)  
- Mix 2 cups of thick coconut milk with 2 teaspoons of salt and add it to the cooked rice. Stir well.  
- Cook on low heat for about 5-6 minutes.  
- Once the Kiribath is thick enough to hold its shape, remove it from the heat.

Now, let's make Imbul Kiribath Rolls:  
                             
    

This should be prepared while the Kiribath (milk rice) is still hot; otherwise, it will break and won't form properly.  
- Take a banana leaf/oil paper and spread a portion of Milk rice evenly on it using a spoon or spatula.  
- Add a tablespoon of the coconut and treacle mixture on top.  
- Carefully roll it up, similar to how you would shape a toffee.  
- Gently remove the oil paper/ banana leaf.
