Sri Lankan Aromatic Yellow Rice
Let's make a flavorful and aromatic Sri Lankan yellow rice!
While there are many rice varieties like fried rice, vegetable rice and dunthel rice, the best rice to pair with Sri Lankan curries is yellow rice. Usually, people prepare it by simply adding salt and turmeric, but when made properly, yellow rice is delicious enough to enjoy even with just one curry.
• Ingredient :
- 500g Basmati rice
- 1 tablespoon ghee or oil
- 1 cup coconut milk
- 1 tablespoon finely chopped garlic and ginger
- A piece of lemongrass, pandan leaf, and curry leaves
- 2 cardamoms and 2 cloves
- 2 star anise (optional)
- 2 small cinnamon sticks
- 2 onions, thinly sliced
- 5 tablespoons green peas
- Cashew nuts as desired
- Salt to taste
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon curry powder
• Directions :
- First, soak 500g of Basmati rice in water for about 20 minutes. (Adjust the soaking time based on the type of Basmati rice you are using.)
- Heat a pan or rice cooker with one tablespoon of ghee. Add fried onions, ginger, finely chopped onions, and spices such as cardamom, cloves, pandan leaves, curry leaves, lemongrass, cinnamon sticks, and star anise. Sauté until fragrant.
- Drain the soaked rice well and add it to the sautéed mixture. Mix well.
- Next, add turmeric powder, curry powder, and salt to taste. Stir everything together, then pour in 1 to 1.5 cups of coconut milk. Mix well, cover with a lid, and cook until the rice is done.
- After a few minutes, a pleasant aroma will arise.
- Now, check if the rice is well-cooked. If needed, add some more coconut milk and let it simmer on low heat.
- Meanwhile, fry the cashews, green peas, and chopped onions separately and set them aside.
- Once the yellow rice is done, transfer it to a serving dish or container. Then, sprinkle the fried cashews, green peas, and onions on top for decoration.
Alternatively, you can add the fried ingredients just before serving to keep them crisp, enhancing the taste.
